| My experiment: Chia Flax Crackers |
lol it's 6:30am and this is what I've been doing this morning.
Chia Flax Crackers
2Tbs chia seeds ([url]http://www.netrition.com/now_blanco_salvia_white_chia.html[/url])
1/3 cup water
2T now golden flax meal ([url]http://www.netrition.com/cgi/goto.cgi?aid=281&url=now_flaxseeds_page.html[/url]) ([url]http://www.netrition.com/cgi/goto.cgi?aid=281&url=now_flaxseeds_page.html[/url])
2T water
1T extra virgin olive oil
sea salt and fresh cracked pepper (to taste)
Mix a little salt and pepper in the 1/3 cup water then mix in the chia seeds and let gel, stirring or shaking occasionally.
One they get very thick, add in the remaining ingredients in the order listed, reserving a little salt and pepper for the top. Let sit 3-5 minuted for the flax to soak up the water.
I used a standard toaster oven baking sheet with parchment paper covering the bottom.
Glop the mixture onto the paper and, with wet hands, gently pat it out until it covers the pan and is a nice even, thin layer.
Bake at 350 for approx 40-45 minutes (after 15 minutes it is cooked enough to score into the size pieces you want, if you want to do that to make cutting easier).
The entire recipe is: 337 calories; 28g fat; 17g carbs; 16g fiber; 6g protein
I scored this into 20 crackers so per cracker: 17 cals; 1.4g fat; 0.8g carbs; 0.8g fiber; 0.3g protein per cracker.
* I only made them this way this one time, so here are my thoughts on any variations: They should microwave fine, I would probably make only ½ a batch at a time to help ensure even cooking, and go 1 minute, then 30 seconds more if needed until crisp; They should be fine at room temp for storage in a closed container(no eggs or other iffy ingredients); yes you can probably double or triple the recipe and make them in the oven; This would probably work with a cookie press to make formed crackers; I think sprinkling poppy seeds, sesame seeds, parmesan cheese, etc would work nicely (I think adding a few drops of sesame oil and sesame seeds on top would be very good).

64 oz water, typical day= brkfst, egg whites and 1/4 cup egg beaters or egg mixed with the egg whites, Break= boiled egg, left over chicken , Lunch= tuna in water, cottage cheese with 1 teaspoon SF strawberry preserves and boiled egg. Dinner= trimmed country style ribs, cottage cheese n/F
evening snack 1/2 cup SF jello. I have one splenda ([url]http://www.netrition.com/cgi/prices.cgi?manu_id=136[/url]), devinci vanilla syrup in coffee every morning. Maybe today I will go into ketosis.

After workout snack: pouch tuna mixed w/1/4 cup cottage cheese
Approx: 1258, 22g carbs, 6g fiber, 105g protein
(will probably add a serving or 2 of benefiber during the day to up the fiber some)
